How to make gluten-free cookies

Do you love sweets but are you celiac? Most pastries and cakes are made with flour, an ingredient that people with gluten intolerance cannot take. However, in recent times the offer of products for celiac has grown and now a wide variety of recipes can be prepared that adapt to this intolerance. In this article we tell you how to make gluten-free cookies in a simple recipe with which you will get to enjoy these delicious sweets again.

Ingredients:

  • 225 grams of butter
  • 200 grams of icing sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 egg yolk
  • 300 grams corn flour
  • 1 pinch salt

Steps to follow to make this recipe:

One.To start preparing gluten-free cookies we will have to beat the butter together with the sugar until you see that a creamy, homogeneous and smooth texture appears; you can do it manually or try with an electric mixer that will help you to get this dough in a faster way. Then you will have to add the egg and the yolk and beat everything again until all the ingredients are mixed together.

Two.The next step is to slowly add the flour; the trick is to add and mix so that the dough integrates and becomes consistent. You will see that it will be very thick, so it is advisable to add a little milk to make it lighter and looser. Now you will have to wrap the pasta with kitchen plastic wrap and store it for at least 2 hours in the fridge so that it takes the consistency it needs.

3.Once these 2 hours (or more) have passed, you will have to take the pasta out of the fridge and spread it on two sheets of plastic wrap; spread well to determine the thickness of your gluten-free cookies. Now, cut the dough with a knife or a cookie cutter and place it on a tray; put it back in the fridge to chill for half an hour.

4.Meanwhile, you can take advantage and turn the oven at 180 degrees so that it preheats. Give it heat both above and below and, when it is hot, put the tray with the cookies (it has to be a tray suitable for the oven). Let the cookies cook in the oven for about 20 or 30 minutes, the exact time will depend on the power of your appliance; for this reason it is important to monitor the evolution of the recipe so that they do not burn.

5.When finished, you just have to take the tray out of the oven and let the cookies cool: above all, do not try to remove them from the tray when they are still hot as they could stick and break. Leave them in a cool place that will help them cool and harden faster; then you can get ready to taste some delicious gluten-free cookies that will make your mouth water.
